At the weekend I also made some biscuits. As I've sold my baking implements, these ANZAC biscuits were easy to make.
Melt together 125g butter, 1 tablespoon water and 2 tablespoons honey or golden syrup over a low heat.Mix together: 1 cup plain flour, half a teaspoon bicarbanate of soda, 1 cup (or slightly less maybe!) brown sugar, 1 cup oatmeal, some dessicated coconut. Add in the butter mixture, and stir.
Spoon teaspoonfuls onto a lightly greased sheet, 5cm apart. Bake for about 20mins, at 180 degrees (or a bit lower!)


They taste a bit like flapjacks... mmm, flapjacks.
